A French cheese cream cake. When the fruit is prime, this very simple dessert is as good as any elaborate concoction. Perforated bottom permits the cheese, cream, and egg-white mixture to drain and compact properly.
Coeur A La Creme, sweetened fresh white cheese molded in the shape of a heart, is served with wild strawberries and other fresh fruits. Often the cheese is mixed with cream and sprinkled with sugar before draining.
These molds, made of pure white porcelain have tiny holes on the bottom to allow excess liquid in the sweetened cheese to run off as it chills. Line the container with dampened cheesecloth, fill it with cheese, and set it on a plate in the refrigerator to chill. Raised above the plate on three feet, the mold will be clear of the liquid as it drains. The mold measures 7-1/4" and will serve six.
